Shelly Giordano. We have just learned of your comment, the "unappealable" remarks of which have particularly caught our attention as they are so unfair, inappropriate, and tinged with disarming malice. You certainly did not understand the meaning of our work and our service; you did not like it? That is your right, but one must remain reasonable and not fall into caricature. The descriptors you use are hurtful and have no place here. Our foie gras, for example, has been prepared in the same way for decades and it is thanks to this recipe that Emile Jung, our eminent predecessor, obtained a third star awarded by the red guide. You see colors that do not exist, service that does not suit you, a strange taste to a particularly excellent wine. However, we do agree with you on one point: "Why did you not protest on site?" We willingly accept criticism when it is constructive but certainly not this form of unbearable lynching. We found no trace of your reservation and could therefore not contact you to discuss the subject calmly; we are sorry about this, believe us. Sincerely, Chef Romain Brillat, Louise-Anne, Director of the establishment.
